Default printer keeps resetting after reboot		December 1, 2023

Disable "Let Windows manage your default printer" if it is enabled.

Workaround: You can set a batch file to run on login to change the default printer:
RUNDLL32.exe PRINTUI.DLL,PrintUIEntry /y /n "HP Officejet Pro 8500"
